Puff pastry snails with jute pesto

Puff pastry can be bought in any supermarket and is quickly prepared. Whether as a snack for in between or for lunch – our puff pastry snails with homemade pesto are quickly prepared and super healthy, especially with our jute powder in it.

For the pesto you need:

  • Radise green (1 bunch of radishes)

  • 20g roasted sunflower seeds

  • 6 tbsp olive oil

  • 2 tbsp Parmesan

  • 1 clove garlic

  • 1 tbsp lemon juice

  • 2 tsp Jute powder

  • Salt, pepper, herbs at will


For the rest of the recipe:

  • 1 roll puff pastry

  • 1/2 large courgettes

  • 75g feta cheese

Simply puree the ingredients for the pesto in the blender. You can determine the quantities yourself, depending on how much Pesto you want to make. Spread the pesto on the puff pastry, spread the remaining ingredients on top and roll to a large roll. Cut the roll into small portions, spread on the sheet and bake for 20 minutes at 180°C.

The radise green is often thrown away and only the tubers (the actual radishes) are retained. The leaves also have many minerals and a pleasant taste. The leaves are suitable for Pesto or salads. So you'll use more of the product and less waste!

This also applies to many other vegetables and fruits. For example, the broccoli drink is edible and full of healthy nutrients. It can be cooked just like the broccoli florets.

Of course, you can make the recipe vegan by replacing the cheeses with vegan alternatives or simply not use any cheese.

If something is left of the pesto, you can also use the pesto in other dishes!
